Salmon Salad With Oranges

Yield: 2 servings


1 can Salmon, drained
1 1/2 cup Celery, thinly sliced
1/3 cup Green Onions, sliced
2 Tbsp Parsley, chopped
1/4 cup Pimento Olives, sliced
2 Oranges
Lettuce Leaves


3 Tbsp Sour Cream
3 Tbsp Mayonnaise
1 tsp Dijon Mustard
1 tsp prepared Horseradish
1/2 tsp Garlic Salt
1/2 tsp Pepper
1 tsp Orange Peel, grated


Empty salmon into a bowl, discard skin and bones. Break salmon into bite size pieces. Add celery, onion, parsley and olives. Mix together lightly, chill at least 15 minutes. Just before serving, peel oranges and remove white membranes. Separate orange sections and set a few aside for garnish. Cut remaining sections in half and add to salmon. Lightly toss salad with dressing.
