Red Wine Tuna Stew

1 1/2 lbs fresh Ahi Tuna, boneless and cubed
4 Tbsp Safflower Oil
8 slices Bacon
20 Button Mushrooms
20 Pearl Onions
3 Celery Stalks, diced
3 Carrots, diced
4 Tbsp All-Purpose Flour
1 cup Tomatoes, peeled, seeded, and chopped
2 cups Red Wine
1 cup Beef Stock
2 Tbsp Worcestershire Sauce
1 Tbsp Soy Sauce
1/2 tsp Dijon Mustard
1/4 tsp Salt
1/4 tsp Black Pepper, cracked


Dice the bacon and fry in a large kettle. Add the oil and the vegetables and saute for 3 minutes. Sprinkle with flour and cook for 3 minutes. Add the remaining ingredients except tuna. Cover and simmer gently for 20 minutes.

Add the tuna and continue to simmer the stew for 30 minutes, covered. Serve tuna stew over rice or noodles.
