Tempura Batter

Deep-fried tempura shrimp piled on a cutting board with cocktail sauce

Ingredients:

  • 3/4 cup Clam Broth
  • 1 1/4 cup Sake
  • 1/2 tsp Sugar
  • 2 1/2 cups Flour, sifted
  • 2 cups Cold Water
  • 2 Egg Yolks
  • 1/4 cup Soy Sauce
  • Oil, for frying

Directions:

Mix all ingredients, with the exception of the oil. Dip seafood such as shrimp, halibut, or scallops in batter and deep fry in hot oil. Fry until lightly browned, about 2 minutes or so.
