Easy Mediterranean Smoked Salmon Pizza

1/2 cup Pre-cooked Salmon
1/8 tsp Liquid Smoke
2 small-sized Flat Bread
4 Tbsp Oil-Soaked Red Peppers
1/4 cup crumbled Fresh Mozzarella
Olive Oil
2 or 3 crumbled Fresh Basil Leaves
1/2 Tbsp Pinenut Pesto


Preheat oven to 350 degrees. Mix pre-cooked salmon with a little bit of liquid smoke, then flake with a fork. Lay out flat bread and smear with a light coat of pine nut pesto. Layer flat bread with 4 to 5 slices of thin mozzarella then sprinkle salmon generously. Place 5 or 6 oil-soaked red peppers on top and lightly drizzle with olive oil. Broil for 3 minutes. Bring out of oven and garnish with fresh basil (tiny leaves).
