Baked Mahi-Mahi with Tomatillo Salsa

1 lb Mahi Mahi Fillets
1/2 cup Tomatillos, finely chopped
1/2 cup Yellow Tomatoes, seeded
1/4 cup Green Onions, minced
3 Tbsp Jalapeno Peppers, seeded & minced
1/2 tsp Cumin Powder
1/4 tsp Salt, or to taste
1/4 tsp Pepper, or to taste
1 1/2 Tbsp Lemon Juice
1 tsp Dark Sesame Oil
Vegetable Cooking Spray
Olive Oil


Combine Tomatillos, Tomatoes, Green Onion, Jalapenos, Cumin, Salt and Pepper in a small bowl and stir well. Cover and chill thoroughly.

Combine lemon juice and sesame oil, then brush mixture evenly over both sides of each fillet.

Place fillets in an 11x7x1-1/2-inch baking dish coated with cooking spray. Bake uncovered at 450°F for 15 minutes or until fish flakes easily when tested with a fork. Transfer to a serving platter. Spoon tomatillo mixture evenly over fillets. Serve baked mahi mahi with your favorite steamed vegetables.
