Lobster Stew

Yield: 4-6 servings


1 1/4 lbs Lobster, boiled
5 cups Milk
1/2 cup Heavy Cream
1 pinch White Pepper
4 Tbsp Butter
1 tsp Salt, or to taste


Remove meat from lobster body and claws. Cut into cubes. Scald milk with lobster shells in it. Drain milk and discard shells. Slightly saute lobster in butter, then add the milk and bring back to boil. Remove from heat, add cream and season to taste.

Serve immediately with fresh bread and garnish with a sprig of parsley. Makes for delicious bowls of lobster stew.
