Langostino Lobster Rolls

1 lb Langostino Lobster Meat
1 Lemon, halved
Salt and Pepper
1 cup Celery, chopped
1/2 cup Parmesan Cheese, grated
1/4 cup Sour Cream
1/3 cup Mayonnaise
7 Tbsp Butter
6 top-split Hot Dog Buns
1/4 cup Celery Leaves, roughly chopped
1/4 tsp Celery Salt
2 Tbsp fresh Parsley, chopped


Heat the langostino lobster meat. Set aside to chill. Whisk the mayonnaise, 4 tablespoons of melted butter, and all the juice from the lemon in a large bowl. Add the celery salt, chopped celery, parmesan cheese, parsely and lobster meat.

Toss to coat. Season with salt and pepper. Heat a grill pan over medium heat. Brush the outside of the hot dog buns with 2 tablespoons of melted butter. Toast the buns until slightly golden, about 1 minute per side. Divide the langostino mixture among the buns. Drizzle with the remaining 1 tablespoon melted butter and sprinkle with celery leaves.
