Oven-Fried Catfish

4 Catfish Fillets
1/2 cup toasted Bread Crumbs
2 Tbsp fresh Parsley, finely chopped
3 Tbsp Green Onions, finely sliced
1 Tbsp Olive Oil

Seasoning Mix:

1 1/4 tsp Garlic Powder
1/2 tsp Black Pepper
1 tsp Salt
1/2 tsp White Pepper
1 tsp Onion Powder
1/2 tsp Oregano
1 tsp dried Basil
1/2 tsp ground Cumin
1/2 tsp Paprika
1/8 tsp Cayenne


Combine all seasoning mix ingredients in a small bowl.

Sprinkle all surfaces of fish evenly with 4 teaspoons of the seasoning mix. Preheat oven to 450F. Combine bread crumbs, parsley, green onions, and remaining seasoning mix in a bowl. Add the oil and mix it with your fingers until the crumbs are moist.

Dredge the fish fillets, one at a time, in the bread-crumb mixture, pressing down gently on each side. Shake off any excess crumbs. Place the fish on a nonstick baking sheet, skinless side up, and bake 6 minutes. Turn the fish over and bake another 6 minutes. Turn over one more time and cook until done, about 4 minutes more. Garnish oven fried catfish with thin lemon wedges. Serve with hot corn-on-the-cob and hush puppies.
