Orange Rosemary Poached Catfish

1 1/4 lb Catfish Fillets
1/4 tsp Rosemary Leaves, chopped
1/4 cup fresh Orange Juice
1/4 tsp Orange Peel, grated
2 Tbsp Red Onion, diced
1/8 tsp Black Pepper
1/2 tsp Salt
8 slices Orange
1 Tbsp Cooking Oil


In large skillet, heat oil over medium heat. Cook diced onion for 5 minutes until soft but not brown. Sprinkle with salt and pepper. Add orange juice, orange zest, rosemary leaves. Stir and cook 1 minute. Add catfish fillets and lower heat to medium-low. Cover tightly and cook 8 to 10 minutes, until fish is opaque. Remove catfish to serving plate. Spoon sauce from skillet over fish. Garnish with orange slices.
