What is filleting?
This includes fillet portioning, vacuum-sealing, & flash freezing. Fillet portions are approximately 1 lb. each.

What is steaking?
This includes steak cutting, vacuum-sealing, & flash-freezing. Steaks are approximately 1 inch thick. Steaks can not have their pinbones removed.

What is pin bone removal?
Pin Bones are the tiny thin bones that you often run into while eating salmon fillets. These pesky bones like to get caught between your teeth and generally impair the experience of enjoying delicious Alaskan salmon. At FishEx, we offer the removal of such bones by running your fillets through our pin -boning machine, then manually hand-checking for any that were missed. If you've never had a boneless fillet of salmon, you're going to love this convenient service.

Can I have my fish skinned?
Of course you can. Our expert filleting can slice the skin right off your fillets so all you have left is pure fish, especially if you've had the pin-bones removed too.

What is vacuum-sealing & freezing?
If you have already cut your fish into portions, we can vacuum-seal them and flash freeze them making the ready for your freezer storage. We use 4-mil commercial grade vacuum bags to insure your fish is kept tightly frozen.

What is Freezing?
We can freeze your whole fish or fillets in our blast freezer for quality freeze to preserve your fish's quality. Freezing at a fast pace within our blast freezer will improve the quality of your frozen fish greatly. In fact, when you thaw it out at home it will be as if you just caught it…fresh and pure.

Do you vacuum-sealing only?
We do not vacuum-seal any fish with freezing involved. Sealing any fish that is above 35 degrees incurs the possible risk of serious illness and should not be consumed.

Do I get my own fish back?
We guarantee that you will get your exact fish back in perfect condition. Each order is tracked through our ordering system and bagged fish are tagged with the corresponding order number. The tag also includes your name and phone number. After many years of experience, we know how important it is to you to receive your own fish back. We feel the same way.
 
What is blast freezing?
Seafood should be frozen as soon as possible after being caught. A blast freezer is a commercial-grade freezer that has the ability to freeze fish at a very fast pace. This diminishes the molecular damage that is caused if fish are frozen too slowly, and insures a high quality freeze preserving your prized catch at it's best.

What should I do when I catch a fish?

First and foremost, do not pick the fish up by its tail, or the thinnest area at the tail end of the body. This can break the fish's spine and cause blood to enter into the meat reducing the quality of your catch.

Once safely landed, pull the fish's gill(s) out to bleed the fish. Getting the blood out as quick as possible will improve the quality of your fish. The next best thing to do, it to cut the head off behind the gills, then make a slice down the middle of the belly and pull the guts out.

Immediately afterwards, you'll need to get your fish on ice, preferably within a covered cooler for of ice. If you do not have a cooler, be sure the fish is covered and not exposed to the sun. You will want to get your fish to us for processing as quick as possible. If, for instance, you are out in the woods still catching fish, and get your fish to us that day, just keep it iced through the night and deliver it the next day. It should be fine as long as it is kept on ice.

How do I get my fish home?
Well, you can either take it with you on the plane, or you can have us ship it via FedEx overnight shipping directly to your home.

Taking it on the plane requires that you have your fish packaged in an airline-safe travel pack. This packaging consists of an insulated Styrofoam box within a cardboard box with proper labeling on it. Your fish will be safely inside wrapped in a plastic liner along with gel ice or dry ice, depending on the airline. We even keep track of individual airline rules and regulations so you don't run into problems at the airport. We make sure you get home with your fish!

Having your fish shipped home is the easiest method. Just let us know when you would like us to schedule your fish to be shipped home and we'll update our integrated Ordering/ FedEx system so our shipping department will know when to ship your fish to you. With this shipping service, you can also ship any other items you may have acquired while in Alaska. Shipping costs vary depending on the weight of your fish. All of our shipments are insured.
 
Can I store my boxes and coolers in your freezer?

Yes, we offer cold storage for any number of boxes and coolers. Our giant commercial freezers are kept at -20 degrees to insure that the products within, including your fish, are kept at an optimal temperature. Cold storage cost $8.00 per box/cooler per day.

I'm in a hurry and need to get my fished processed immediately. Can you do that?
We offer a "Same-day Turnaround" service that allows you to get your fish back within 6 hours. This includes filleting, steaking, vacuum-sealing, and freezing. If you want your fish back on the same day, you will need to make sure you get it to us first thing in the morning. We open at 7am. Take in mind, you can always save the $35 charge for this and have us ship it to you via FedEx. Depending on the weight of your fish, the costs will not be that much different (unless you brought us a "pile" of fish).

Do you carry the insulated shipping boxes at your store?
Yes. We carry a full line of Styrofoam insulated boxes that hold from 5 lbs. to 50 lbs.
 
What is the maximum weight I can carry back with me on the airlines?
Check with your airline for their current policy. Most airlines allow two pieces of luggage at 50 lbs. each.

What are your business hours?
We are open Monday through Friday, 7am to 5pm, and Saturday through Sunday, 10am - 4pm.
