1 lb Scallops
1 Tbsp Butter
1 small Onion, chopped
1 Green Pepper, chopped
1 stalk Celery, chopped
1 lb Tomatoes, chopped
1 package Lipton Herb & Garlic Soup Mix
white or brown Rice


Place butter, onion, green pepper, and celery in a pan and sauté until soft. Add chopped tomatoes and Lipton Soup Mix package. Cover and simmer for about 7 minutes. Add scallops and cook until done. Serve over a bed of hot cooked rice.
