Red Wine Tuna Stew

Ingredients:

   1 1/2 lbs fresh Tuna, boneless & cubed
   4 Tbsp Safflower Oil
   8 slices of Bacon
   20 Button Mushrooms
   20 Pearl Onions
   3 Celery Stalks, diced
   3 Carrrots, diced
   4 Tbsp All-Purpose Flour
   1 cup Tomatoes, peeled, seeded, & chopped
   2 cup Red Wine
   1 cup Beef Stock
   2 Tbsp Worcestershire Sauce
   1 Tbsp Soya Sauce
   1/2 tsp Dijon Mustard
   1/4 tsp Salt
   1/4 tsp cracked Black Pepper

Dice the bacon, fry in a large kettle, add the oil and the vegetables, saute for 3 minutes. Sprinkle with flour and cook for 3 minutes. Add the remaining ingredients except tuna. Cover and simmer gently for 20 minutes. Add the tuna and continue to simmer the stew for 30 minutes, covered. Serve tuna stew over rice or noodles.
