Crunchy Hot Tuna Bites

Ingredients:

   3 cans Tuna, drained
   1 Tbsp fresh Lime or Lemon juice
   1/2 tsp grated Lime Peel
   1 Green Onion, minced
   2 Tbsp minced Parsley
   1 tsp Worcestershire Sauce
   1 tsp prepared Hot Mustard (or to taste)
   Several dashes of Liquid Hot-Pepper Sauce (or to taste)
   2 Tbsp unsalted Butter, melted
   16 Melba Toast Rounds
   1/2 cup Grated Swiss or Sharp Cheddar Cheese

Preheat broiler. Combine tuna, lime or lemon juice, lime peel, green onion, parsley, Worcestershire sauce, mustard and hot-pepper sauce. Taste and adjust seasonings. Brush melted butter on toast rounds and arrange in a single layer in a broiler pan. Top each round with a portion of the tuna mixture, then with 1-1/2 tsp cheese. Broil until cheese is melted and tuna mixture is hot. Makes 16 tuna appetizers.
