Sweet Cheeks

Ingredients:

     1 pound of Halibut Cheeks, thawed
     1 cup of sugar
     ¼ cup of salt
     6 to 8 cups of water

Directions:

In a large pot, bring water, sugar, and salt to a boil.  Add halibut cheeks to the boiling water and boil for 3 to 5 minutes. Cheeks will become opaque white in color and rise to the top of the water. Serve sweet cheeks with hot melted butter. Serves 3 to 5 people.
