Crawfish Fettuccine

Ingredients:

   1/4 cup Margarine
   1 3/4 cups Onion, chopped
   1 1/2 cups Red Bell Pepper, chopped
   1 1/2 cups Green Bell Pepper, chopped
   1 cup Green Onions, chopped
   4 cloves Garlic, minced
   1/4 cup All-purpose Flour
   1 1/2 cups Skim Milk

   1/2 lb light Pasteurized Processed Cheese (such as Velveeta Light), cubed
   1 1/2 lbs cooked Crawfish, peeled
   1 Tbsp Worcestershire Sauce
   1/4 tsp Black Pepper
   1/4 tsp ground Red Pepper
   9 cups hot cooked Fettuccine, (1 pound uncooked)

Directions:

Melt margarine in a Dutch oven over medium-high heat. Add onion and next 4 ingredients, then saute 5 minutes. Stir in flour and milk gradually stirring with a whisk. Add cheese and stir until cheese melts. Stir in crawfish, Worcestershire sauce, black pepper and red pepper. Cook until heated. Add pasta, and toss well. Serve hot with steamed vegetables and fresh bread. Makes 9 delicious servings of crawfish fettuccine.
