Basic Fish Stock

Ingredients:

   2 lbs Fish Trimmings (heads, bones, and tails)
   2 quarts Water
   1 Bay Leaf
   1 Tbsp Salt

Directions:

Wash fish trimming thoroughly in salted water. Pour water into deep sauce pan. Add fish trimmings, salt, and bay leaf. Cover and simmer for 30 minutes. Strain and reserve fish stock for preparing fish recipes. Makes about 3 pints.

Spiced Fish Stock

Ingredients:

   2 lbs Fish Trimmings (heads, bones, and tails)
   2 quarts Water
   1 Bay Leaf
   1 Tbsp Salt
   2 Cloves
   1/2 tsp Mace
   3 stalks Celery, with tops
   1 Parsley Root
   6 whole Peppercorns

Wash fish trimming thoroughly in salted water. Place all ingredients in a deep sauce pan and bring to a boil. Reduce heat and simmer for 45 minutes. Strain and reserve fish stock for preparing fish recipes.
