In large skillet, heat oil over medium heat. Cook diced onion for 5 minutes until soft but not brown. Sprinkle with salt and pepper. Add orange juice, orange zest, rosemary
leaves. Stir and cook 1 minute. Add catfish fillets and lower heat to medium-low. Cover tightly and cook 8 to 10 minutes, until fish is opaque. Remove catfish to serving plate. Spoon sauce from skillet
over fish. Garnish with orange slices. Makes 4 servings.
