Marinated Catfish

Ingredients:

   4 Catfish Fillets
   melted Butter or Margarine

Lemon Marinade:

   1/2 cup Lemon juice
   1/2 cup Vegetable oil
   2 Tbsp Onion, chopped
   1 tsp Salt
   1 tsp Tabasco Sauce

Italian Marinade:

   1 c Italian Dressing
   2 1/2 Tbsp Lemon Juice
   1/2 tsp Salt

Wine Marinade:

   1/2 cup dry White Wine
   1/2 cup Vegetable Oil
   2 Tbsp fresh Parsley, chopped
   1 Lemon, thinly sliced

Combine ingredients from one of the above marinade recipes. Marinate catfish fillets for 1 to 2 hours, turning occasionally. Broil catfish fillets until fish flakes easily with a fork. Baste with marinade and/or melted margarine. Broil fillets 6-8" from heat for 5 minutes. Makes 4 servings.
