Yield: roughly 2 quarts


2 lbs Fish Trimmings (heads, bones, and tails)
2 quarts Water
1 Bay Leaf
1 Tbsp Salt
2 Cloves
1/2 tsp Mace
3 stalks Celery, with tops
1 Parsley Root
6 whole Peppercorns


Wash fish trimming thoroughly in salted water. Place all ingredients in a deep sauce pan and bring to a boil. Reduce heat and simmer for 45 minutes. Strain and reserve fish stock for preparing fish recipes.
