Serving Sizes

A one pound package of medium scallops would be good for 2 to 3 people. That would be about 10 scallops each. Larger scallops will yield less scallops per person, but can be cut in half increase count.

Storing and Thawing

Scallops can be thawed under refrigeration about 12-16 hours before preparation. The vacuum-sealed packages can also be ran under cold water to speed this up considerably.

Portion Size

Scallops will vary in size from small, medium(20-30), large, extra large(10-20), and jumbo(U10). Each corresponding number range refers to the amount of scallops per pound. "U" means under, so there are usually under 10 scallops in one pound of Jumbo scallops. Our scallops come in 1 pound packages.

Fishing Seasons
Alaska scallop fishing began in 1967 around Kodiak Island. Currently, Alaska's commercial scallop fishery is off the outer coast from Cape Spencer to Yakutat. There are only nine permit holders that fish for scallops. Crews can be as large as 11 members who run 2 dredges while shucking, washing, and icing scallops around the clock.

Scallop season usually starts in July. Normally, they are available all year long but with a limited seasonal opening and only a 9 commercial scallop fishing licenses available, the demand for Alaska scallops can commonly burden the supply. Scallops are commonly block frozen immediately after catch to insure quality and sustainability through out the year.
