Serving Sizes

When serving White King salmon fillets, about 1/2 pound per person is a good portion size. King salmon carries a higher oil content than most Alaskan salmon and is thereby richer. Serving a smaller portion size may be desired in some cases.

Storing and Thawing

To thaw flash-frozen White King salmon fillets, place them in refrigerator for a day. Because they are vacuum-sealed you can also run cold water over sealed fillets or steaks to speed up the thawing process. Quickly rinse salmon prior to preparing it. Left-over salmon should be refrigerated and used within a couple of days.

Packaging and Portion Sizes

Our White King salmon fillets are flash-frozen and individually vacuum-sealed for your convenience. They can be stored in your freezer for several months. Fillets are boneless, and range from 1/3 to 1 lb. packages. Full-size fillets are often available to buy during the summer months as well.

Boneless Fillets - Pin Bone Out

Fillets are deboned with our pinbone machine, then examined by trained inspectors.  We do our best to remove all bones, "so that you don't have to".  However, it is possible that we could miss a bone.

The White King Salmon gets its name from the white colored flesh that is completely invisible to the fisherman. Scientist agree that the fish is not an albino strain, instead it gets the color from an inability to metabolize pigments in the fish's diet. Pigments called Carotenoids are naturally accruing in a variety of different organisms.

Regardless of the White King's genetic makeup, it is still a novelty that is found in menus in top restaurants around the world. The White King Salmon is very rare and difficult to find. They make up only about five percent of the total population of all king salmon. Delicate flavor and nutrient rich, these gourmet delights are finding their way into the heart and stomachs of people everywhere.
