Serving Sizes

When it comes to serving salmon fillets, about 1/3 to 1/2 pound per person is a good portion size.

Storing and Thawing

To thaw flash-frozen Copper River salmon fillets, place them in refrigerator for a day. Because they are vacuum-sealed you can also run cold water over sealed fillets to speed up the thawing process. Quickly rinse salmon prior to preparing it. Left-over salmon should be kept refrigerated and used within a couple of days.

Packaging and Portion Sizes

Our Copper River king salmon fillets are flash-frozen and individually vacuum-sealed for your convenience. They can be stored in your freezer for several months. Fillets are boneless, and range from 1/3 to 1 lb. packages. Full-size fillets are often available during the summer months as well.

Fillets are deboned with our pinbone machine, then examined by trained inspectors.  We do our best to remove all bones, "so that you don't have to".  However, it is possible that we could miss a bone.

Fishing Seasons

The mighty Copper River is one of the longest and most rugged rivers in Alaska. Twisting and cutting deeply through the Wrangell and Chugach mountains, it's 300 mile stretch of pristine glacier-fed waters is riddled by hundreds of rapids. The rushing waters of the Copper River empty steeply from the mountains above into the Gulf of Alaska. This ever-changing river delta, or "flats", is where the commercial fishery takes place every year.

The Copper River fishery is one of the first salmon fisheries to open every year. Kings and sockeye are the first to run, starting around the 15th of May, while silvers run a month or so later.

Hundreds of fishermen try their luck, flooding the local Alaskan fishing town of Cordova in a "salmon rush" frenzy.

The first prized fish are tendered and rushed back to Cordova where "salmon-thirty-salmons", quickly fly directly to Seattle and off-load the fish to markets and restaurants.
