Whole-cooked king crab are also much richer than just legs & claws, because with a whole-cook, the fats from the body of the crab spread-out into the leg meat during the cooking process.  The flavor is complex, sweet, and will have you coming back for more.  Out of all the varieties of crab we sell, this is our founder's favorite!

Pre-heat your oven to 400 degrees.  Fill a deep baking pan with about 1/2 inch of water, and place the thawed crab into the pan, covering with aluminum foil.  Insert a meat thermometer through the foil, and into the thickest part of the crab body (through the back of the crab or it's mouth).  Bake until your thermometer temperature reaches 190-200 degrees F.

*Note:  Sometimes breakage can occur during shipping.  If this happens, you can easily "splint" the leg with a toothpick or paperclip.

Storing and Thawing

Keep your frozen whole-cooked king crab well-wrapped in your freezer, until 24 hours before your meal.  Crab legs are quite brittle when frozen, so handle carefully.  If breakage does occur, don't worry; you can easily "splint" the leg with a toothpick or paperclip.

To thaw, carefully remove the frozen crab from the plastic bag, and place it in a large, deep baking pan.  Thaw the whole crab for 24 hours in your refrigerator.

A good rule-of-thumb is 1.5 pounds of whole weight per person served.  Thus a 4-5 pound crab is about right for serving 3 people.  A 5-6 pound crab is about right for serving 4 people.

Caught in Alaska near St. Matthew Island & the Pribilof Islands, this species is known for its proportionally giant claws.  When they are alive, blue king crab are brownish with royal blue highlights. Blue king crabs from the Pribilof Islands district are some of the largest king crab in the world, sometimes exceeding 18 lbs in weight.

Fishing Seasons

This is the first time since 1998 that blue king crab fishing has been open in Alaska.  It is fished for more commonly in Russian waters and is commonly marketed as red king crab in the U.S. markets.

Availability

Alaska blue king crab availability is rare. This is the first time it has been available since 1998. Russian blue king crab is commonly available yearly.  When king crab caught it is cooked and blast frozen to capture its quality. This commercial level of processing allows king crab to be kept frozen for long periods of time, up to a year or more. Crab legs are glazed with an outer shell of frozen water to protect it from the elements.
