Storing and Thawing

To thaw fresh-frozen black cod fillets, place them in refrigerator for a day. Because they are vacuum-sealed you can also run cold water over sealed fillets to speed up the thawing process. Left-over black cod should be refrigerated and used within a couple of days.

Portion Sizes

Our black cod fillets are fresh-frozen and individually vacuum-sealed for your convenience. They can be stored in your freezer for several months. Fillets range from small 1/3 lb portions to 1 lb packages.

Serving Sizes

About 1/3 to 1/2 pound per person is a good portion size when serving black cod. You might find that black cod is so good that you'll want to prepare extra just in case.

Black cod came to be appreciated several centuries ago by the Makah Indians who fashioned kelp fishing lines and hemlock hooks to capture their prized fish. Today, most Alaska black cod is longlined--in the cold, deep waters of the Bering Sea or in the Gulf of Alaska where the world's largest black cod population exists. After it is landed, the black cod is processed and frozen. Black cod is also known as sablefish, or butterfish.

Availability

Fixed gear (longlines and pots) sablefish fisheries are conducted under Individual Fishing Quota (IFQ) programs. The primary product is whole fish for Japanese markets with small amounts distributed in specialty domestic markets.
